Banana Bread

This banana bread is vegan, gluten free, and absolutely delicious! Best warm and I like to add some plant-based butter or cream cheese along with a cup of hot chai tea.  A wonderful fall treat!

Dry Ingredients:
3 cups oats ground into flour
1/2 cup almond flour or feel free to sub another flour
1 1/2 teaspoon baking soda
½ teaspoon cinnamon

Wet Ingredients:
¾ cup applesauce
3 very ripe bananas
1 cup unsweetened plant based milk
1 Tbsp. apple cider vinegar
1 teaspoon vanilla extract
1/2 cup chopped soaked dates

Optional:
1 Tbsp maple syrup
1/2 cup walnuts

Instructions:

Preheat oven to 350.

Mash bananas with a fork in a small bowl and add applesauce, vanilla extract, apple cider vinegar. and plant based milk. Mix until smooth.

In a large bowl combine all dry ingredients together.

Combine the bowls together and mix. Pour into you loaf pan (for easy removal line with parchment paper).

Bake for 45 minutes to and 1 hour. Remove from heat and cool for 10 minutes. Serve and enjoy!
